Non-Compliance with SAP standard functionality and a lack of seasoned consultants.

what you exactly mean? As wrote this way the both things are rather issues than risk. But lets assume them bot:
- non-compliance with SAP - depends on scale, reason and area of this non-compliance. Non-complance creates risk because of development (instead usage of well tested standard function). But in fact that is rather margin by SAP projects so the impact is limited and that risk can be right managed.
- lack od seasoned consultants you can manage very easy since there are many seasoned consultants on the market.
I will rather nominate 2 other things for 1st place of common risk:
- lack of end user involvement sreating risk of rejection of the solution - huge risk since it may create issue at the very end of the product
- creeping changes making that the project will divert as the Costa Concoria did...
