Could I create an additional column for a new hierarchy for an existing dimension directly in production?

If you have enough rights in BPC production (task profile), you can add new hierarchies in production directly, but i would not recommend it.

I like to have my system landscape in sync. Dimension members are off course different, but dimension properties and hierarchies are the same on the different environments.

That allows you to 'experiment' with the new hierarchy on templates, work status if you want to change the OWNER hierarchy, ...
