Hello Nicolas,
The UI you are showing is nothing to do with AOLAP. Please refer to the Analysis OLAP Administrator Guide "Session timeout settings" (This is section 4.14 for the SP03 Admin Guide).
If you set the AOLAP timeout to 30 mins you actually get 45 mins! This is because of the "autosave" feature in AOLAP when it detects no activity. Basically, if 50% of the timeout period has elapsed without activity then AOLAP autosaves the current workspace. But the act of doing that resets the timeout counter. Hence if the timeout is set to 30 mins then it actually becomes 45 mins!.

Service Startup time out has nothing to do with A-OLAP session time out.
If you are trying to increase A-OLAP session time out, you should refer to Ian's reply.

As message says you must enter timeout between 1-1800 seconds. I do not think there is any way we can increase this limit beyond 1800 seconds.
