We need a little bit more information:

1.  What version of Crystal - go to Help>>About and get the exact number.

2.  Based on the structure of the file name, I'm going to assume that you are running it through either Crystal Reports Server or BusinessObjects.  If that's the case, which version are you using?

When you schedule the report, there are a couple of options at the bottom of the screen for setting the file name. I suspect that you have selected "Use Automatically Generated Name", which gives you the file name format that you're seeing.  Change this to "Use Specific Name".  I then usually use the place holders to set the name, something like this:

Title-DateTime and I make sure that "Add File Extension" is checked.

This will look like %SI_NAME%-%SI_STARTTIME% in the text box for the file name.

Unfortunately, no.  However, there is an idea on IdeaPlace around this issue that you can vote up to try to get this:

You can use %SI_STARTDATE% to display date only.  Note that it will work in publication; but it is not listed in the default place holders in BI 4.x.
