For a simple demo, all I want to show is trigger of a WF upon a status change of a EHS Specification?

Turn on SWEL in your test system, change an EHS status and see if it creates an event.
If so, use that to start your workflow.

when I understand right you want to trigger an event to start a particular WF. For these purpose you can use transaction SWUE.
