Our IT Security team have identified and advised to change the SAPADM password. Please advise as if this change will bring down the SAP Systems. I am new to the Basis side and currently researching and finding the pros and cons of this possibility.

There would be no problem in chagning the "sapadm" password.

I am not aware of any link or document that would address this password change.
But imagine that you would not be allowed to change this password, never.
This would not make sense, despite of being a potential security breach.
For example, an employee of your company (that new this password) has decided to leave the company. Changing this password would be recommended in this case, so no one outside your company has any passwords they are not supposed to have.
You can change this password at a test system first. This should give you confidence to change it in production afterwards .
In addition, setting the initial password is a post-installation step in case you are manually installing the host agent:
