Inventories are usually managed on either S or V (standard or moving average) prices. The product of their quantity times the current price is reflected in the balance sheet on an ongoing basis. During the quarterly or year end, Balance sheet may be required to be shown with the inventories, based on the lowest value principle.

SAP provides tool like MRN0 and MRN1 to derive and update the material with prices obtained thus. MRN0 is based on market price and MRN1 is for devaluating inventory based on range of coverage, (the longer the inventory age, higher the devaluation percentage, something like that) Details here!
